Quick Medjool Date Caramel Dip

I make a batch of this date caramel dip about once a week and keep it in the fridge. It’s so simple to make — everything just goes straight into the blender. I love it spooned over porridge, smoothie or yoghurt bowls, blended into smoothies, served as a dip for fresh fruit, or even added to baking.

Ingredients
- 8–10 Medjool dates, pitted
- Hot water for soaking
- 6-8 tbsp date-soaking water
- 1 tbsp pure maple syrup (optional)
- ½ tsp vanilla extract
- Pinch of sea salt

Method
- Soak the Medjool dates in hot water for 10–15 minutes until soft.
- Drain, keeping some of the soaking water.
- Blend the dates, maple syrup, vanilla and sea salt.
- Add the soaking water 1 tbsp at a time until smooth and creamy.
- Serve with sliced apples, bananas or strawberries.

I’d add a tiny sprinkle of flaky sea salt on top for that salted-caramel flavour without the refined sugar.
You can also get creative with this recipe — you definitely don’t have to stick to mine. Try adding a spoonful of nut butter, a splash of plant milk, a little cinnamon or even some coconut cream for a richer, more indulgent version.
Blending tip: Date caramel is quite thick, so the food-processor bowl works best. You may need to stop and scrape down the sides, adding a small splash of date-soaking water or plant milk if needed.
Which dates work best?
I use Medjool dates because they tend to be larger, softer and naturally sweeter, giving the caramel a lovely smooth consistency. However, you can use almost any dates you already have at home. Soaking them helps soften and rehydrate them even if they’ve become a little dry.
