Vampire Beetroot, Apple and Ginger Halloween Juice

Deep red and naturally sweet, this Halloween juice looks wonderfully spooky without artificial colours or added sugar. The pomegranate seeds and longan fruit “eyeballs” turn a simple beetroot juice into a fun Halloween drink for adults and children.
Packed with vitamin C and protective plant compounds called polyphenols, this vibrant juice is a delicious way to enjoy more fruit and vegetables. Beetroot provides naturally occurring nitrates that support healthy blood flow, while coconut water makes it refreshingly hydrating.

Ingredients
Makes 2 glasses
200g raw beetroot, peeled
2 sweet apples
1 lime, peeled
1 small piece of fresh ginger root, peeled
100–150ml coconut water
6 peeled and pitted longan fruits, for the eyeballs
Ice, optional
Method
Peel the beetroot, lime and ginger root. There is no need to grate or finely chop them, the juicer will do the rest.
Pass the beetroot, apples, lime and ginger through the juicer.
Stir in 100ml of coconut water. Add a little more if needed, depending on how concentrated you like your juice.
Divide the juice between two glasses and add ice if desired. Place a pomegranate seed inside each peeled and pitted longan fruit to create the Halloween eyeballs.
Thread three longan fruit eyeballs onto each cocktail skewer, then rest one skewer securely across the top of each glass. Serve immediately.
A Little Tip
Start with a small piece of ginger root, approximately 1–2cm, as its flavour can quickly overpower the apple and lime. You can always juice a little more and stir it in after tasting.
Can’t find longan fruit? Use peeled and pitted lychees instead, they work just as well for creating the spooky eyeballs.
