The Refined Sugar-Free Pumpkin Spice Latte That Actually Tastes Like Autumn

I get so excited when I see the pumpkin spice latte signs go up outside coffee shops. There's something so nostalgic about it — it instantly feels like autumn is here.

But with my health and longevity goals, I'm not about to start having a syrup-loaded PSL every day just because it's autumn. I still want the cosy seasonal drink — just in a way that fits how I actually eat.

So I made my own. It's plant-based, refined sugar-free, made with real pumpkin and warming spices, then naturally sweetened with my homemade date caramel instead of a sugary syrup. Creamy, cosy, and it genuinely tastes like autumn in a cup.

Here's exactly how I make it, hot or iced, plus an easy version if you don't have an espresso machine.

Why This Version Is Actually Good For You

This isn't a "diet" version that tastes like sadness. It's swap-the-bad-stuff-out, keep-the-joy-in:

  • No refined sugar — the date caramel does all the sweetening, so you get fibre and minerals instead of empty sugar.
  • Real pumpkin — tinned pumpkin purée brings actual fibre, vitamin A and antioxidants, not just "flavouring."
  • Real spices — cinnamon, nutmeg, ginger and cloves aren't just for taste; cinnamon in particular is linked to helping balance blood sugar.
  • Plant-based — made with oat milk, so it's dairy-free and naturally creamy without needing loads of syrup to feel indulgent.

Basically: you get the ritual and the cosiness of a PSL, without the sugar crash twenty minutes later.

What You'll Need

  • 1–2 shots of espresso (or see the instant coffee method below)
  • 200–250ml oat milk (barista blend works best for froth)
  • 2 tbsp tinned pumpkin purée
  • 2 tbsp date caramel (recipe on my recipe page)
  • ½ tsp cinnamon, ⅛ tsp nutmeg, a small pinch each of ground cloves and ginger (or 1/8 tsp ready-made pumpkin spice blend)
  • Ice, for the iced version

☕ Little tip: Go easy on the spices to start — they can quickly overpower the coffee. Add a little pinch, taste, and build it up until it’s just right for you.

Step by Step (Hot)

1. Make your pumpkin spice base. Warm the pumpkin purée with your spices in a small saucepan (or just a mug in the microwave) for a minute or two, just until fragrant. This wakes the spices up properly instead of them tasting flat.

2. Stir in the date caramel. Add it to the warm pumpkin mixture and stir until smooth. This is your PSL syrup — you can batch it ahead and keep it in the fridge for the week.

3. Pull your espresso. Two shots, poured straight over the pumpkin mixture, stirred well so it doesn't clump at the bottom. The heat helps everything loosen and combine smoothly.

4. Froth your oat milk. Steam it if you've got a machine — barista blend froths best. No machine? Warm it and use a handheld frother, or shake it hard in a lidded jar for 30 seconds. Pour over.

Iced Version

My favourite way to drink it, honestly.

  1. Mix your pumpkin purée, spices and date caramel as above.
  2. Pour the hot espresso over it and stir until smooth, then leave to cool for a minute.
  3. Fill a tall glass with plenty of ice, add cold oat milk, then pour the pumpkin-espresso mixture over the top.

For the pretty layered look: ice → milk → pumpkin espresso mixture, then stir it all together before drinking.

No Espresso Machine? No Problem

Dissolve 2 tsp instant coffee (or instant espresso powder, if you can find it — stronger, closer to real espresso) in 2–3 tbsp hot water, just enough to dissolve it. Make your pumpkin-date base as above, stir the coffee in, then top with warm frothed or cold oat milk depending on hot or iced.

Make It Your Ritual

Part of what makes autumn nice is the little rituals — the jumper, the candle, the walk with the leaves crunching. Make this drink part of that. Sit with it, don't just knock it back between emails. That's genuinely part of the "wellness" of it — the ingredients matter, but so does actually slowing down to enjoy it.
